Cumberland Heights is known for our patient care and treatment. We are also known for the many wonderful meals that are prepared from our kitchen staff every day. Chef Jim Threadgill and Chef Tim Dies do a wonderful job of filling our patients physically.Today they would like to share a recipe from the kitchen for their “No-Bake Cookies”. We hope to share more recipes in the future from the CH Kitchen!
No Bake Cookies
-Cumberland Heights Kitchen
2 cups sugar
1/2 cup milk
4 tbsp butter or margarine
4 tbsp cocoa
2 1/2 cups quick oatmeal
1/2 cup chopped nuts (optional)
2 tsp vanilla
1/2 cup crunchy peanut butter
Combine sugar, milk, butter and cocoa in cooking pot. Bring to rolling boil and continue boiling for exactly 1 1/2 minutes. Add remaining ingredients. Blend well. Press into a well-greased cookie sheet or drop heaping tablespoons onto well-greased cookie sheet. Cool and drool!
